Pizza Bricks, Baking Tiles, and Baking Sheets
Professional pizza makers use specially constructed ovens, often of brick, that
achieve temperatures several hundred degrees hotter--and substantially drier--
than home ovens. The intense, even, dry heat bakes the pizzas quickly, yielding
crisp, perfectly browned crusts and golden, bubbling toppings. You can, however,
approximate the effect of a professional oven at home by using pizza bricks or
baking tiles. After baking the pizzas, be sure to let the tiles or bricks cool completely
before handling them.
