Much of today s training of the health professional takes
place in an interdisciplinary setting, and this is particularly
evident in dietetics and nutrition. Increasingly, the student of
dietetics is receiving clinical experience in the same setting as the
nursing student. The sixth edition of Food, Nutrition and Diet
Therapy reflects this multidisciplinary training and provision of
health care. We felt the need for a text that recognizes the broad
area nutrition occupies in the care of patients and the fact that
much nutritional care is provided by non-dietetic professionals.
We also felt the need for a text that would be at the level of pro-
fessional nursing and dietetic students and, in some cases, of
medical students. Accordingly, this edition has been extensively
revised and expanded.
Health care professionals are concerned with the mental
and social well-being of their patients as well as with their physi-
cal well-being. Discussions throughout this text deal with the
individual as a member of the community, but they also take into
consideration the individual s uniqueness in terms of nutri-
tional needs, life style and goals; of the meaning of food and
eating; of the stage of growth and development; and particularly
of the behavioral changes needed to improve dietary habits
and the processes through which learning takes place.
