挺有意思的小书，从鸦片战争前美英去中国做贸易讲起，一直到中国奥运让老外认识新的中餐，一百多年过去了，虽然在美国有了湖南菜四川菜台湾菜粤菜京菜，但是很多美国人的印象仍然是那几个，牛肉西兰花，左宗棠鸡，宫保鸡丁.....便宜量大。书中亮点除了李鸿章访美外，还有尼克松访华被承诺绝对不上海参，和被烤鸭迷得顺魂颠倒及召集全白宫访华人员学习用筷子，最为有趣。

其实重点是文化史，真正“美式中餐”的源流就两三章，但一前一后从广州开关、二鸦战争到中美邦交正常化都有文化史的大框架，中间还有一章中国农业史的概况。其实早期都是互不待见的，包括西海岸的中餐也是，最开始也是依靠廉价才得以立足。最终还是因为排华法案饱受歧视并逃到纽约的华人，美式中餐才枯木逢春。这解决了我很多疑问，特别是关于如何理解美国作家（尤其是犹太人）小说中的中国餐馆的形象。
