非常棒!讲的是美国人对中餐态度的转变,结合的大背景很好。全书从来中国的美国人讲起算是出乎意料。从一个很特别的角度看了近代史。最后一章尼克松访华前后也很值得玩味。用食物转移焦点,哈哈。最赞的是第三章,当今我们理所当然的食材都是在什么样的时期走上饭桌的,值得一读再读。参考文献感人!

评分其实重点是文化史,真正“美式中餐”的源流就两三章,但一前一后从广州开关、二鸦战争到中美邦交正常化都有文化史的大框架,中间还有一章中国农业史的概况。其实早期都是互不待见的,包括西海岸的中餐也是,最开始也是依靠廉价才得以立足。最终还是因为排华法案饱受歧视并逃到纽约的华人,美式中餐才枯木逢春。这解决了我很多疑问,特别是关于如何理解美国作家(尤其是犹太人)小说中的中国餐馆的形象。
本书作者安德鲁·科伊(Andrew Coe),美国知名饮食文化学者、作家,熟稔中国饮食传统,为《美味》《纽约时报》《洛杉矶时报》《华尔街日报》等媒体撰写饮食文化类专栏文章超过20年,并且是《牛津美国餐饮百科全书》的作者之一。他的著作《来份杂碎:中餐在美国的文化史》最初由牛津大学出版社出版,并获得业内和舆论的一致好评。目前,他和家人在纽约生活。
