作者認為，相比於華麗的中華宴席菜，中國的鄉間普通傢常菜更勝一籌，其擅長使用豐富多樣的蔬菜，肉類使用較少，主要用來“藉味”，讓素菜吸附葷菜的鮮美，健康又美味。莫名覺得這種嚴謹老外視角下的菜譜會更靠譜。
